Delicious Paleo Pizza!
The things I miss most being on the paleo diet are definitely cheese and bread. Which translates to pizza! Last night I decided to try and make a paleo friendly pizza, and oh boy it was delicious, I didn’t even miss the cheese.
I started out with an almond Flax crust from Paleoplan.com
Ingredients:
1-1/4 cups flaxseed meal
1 cup almond flour
1 teaspoon sea salt
2 tsp natural baking powder
1 tablespoon honey
1-2 tablespoons Italian seasonings (kind of went crazy with this but it was great!) Play with it to your tastes.
- Garlic
- Organo
- Basil
- Rosemary
- Saffron
- Cayenne
3 large eggs
3 tablespoons olive oil
1/2 cup water
toppings of choice (I’ll get to mine in a minute!)
Directions:
Preheat oven to 425
Combine flaxseed meal, almond meal, sea salt, baking powder, and seasonings together.
Beat together eggs, olive oil, honey, and water until smooth
Pour liquid mixture into dry mixture and blend until smooth.
Press into desired shape, I put it into a rectangular cake pan/baking dish spreading it evenly across the bottom.
Bake for 10 minutes until mostly cooked.
Remove, add toppings and cook for another 10-15 minutes.
Toppings:
Homemade Pesto (blend all ingredients in a food processor).

- Olive Oil
- Pine Nuts
- Garlic
- Mama Lils Peppers
- Yakima Smoked Salt
- Fresh Ground Pepper
- Coconut Milk
- Pimento
- Red Pepper Flakes
Sweet onion
Red Bell Pepper
Roma Tomatoes
Artichoke Hearts
Shredded Chicken Breast
Spread the pesto over the crust, and top with veggies and meat. Then throw it back in the oven until veggies are cooked through, watch out that you don’t burn the crust!
Turned out great, I can’t wait to have leftovers for lunch today!
